Blog Candy Winner!

Today is the drawing for the blog candy!

Sue of Sue's Stamping is the name which popped out of the basket. I e-mailed Sue so she can send her mailing address.

Thanks to each of you who played by answering the relevant question. Promises, too, for there to be more candy in about a month.

No card share today, but may I share our Cheesy Squash Casserole recipe instead of a card?


Jacky’s Cheesy Squash Casserole

Ingredients:
  • 8 cups cubed squash (yellow and/or zucchini)
  • 1 medium onion, chopped
  • 3/4 cup sour cream (or plain greek yogurt)
  • 1 cup grated cheddar cheese
  • 2 tbsp butter
  • 1/2 cup crushed Ritz crackers (or Panko Crumbs)
  • salt and pepper to taste
Method:

1. Chop Squash and boil (about 20 minutes) until tender. Place towel in colander and pour squash into towel until it cools. After squash cools, squeeze to get excess water out of it. Put into bowl.

Note: squeezing out moisture prevents a watery casserole

2. Saute onion in fry pan with butter until translucent.

3. Add onion and remaining ingredients (except Ritz crackers)  into bowl, and combine. After mixing thoroughly, place into casserole dish.

4. Top with crushed Ritz crackers or Panko Bread Crumbs. Bake at 350 for 25 minutes, until cheese and sour cream have heated well.

I wonder how it would go over at my annual Family Mother's Day Luncheon. This will be our 20th year! No men, either.

Oh, that sounds so good, Donna! We're only a month or so away from asparagus season (I happen to live in the asparagus capital of the world) and I grow zucchini every year in my own garden. I think the same recipe would be great with asparagus instead of the zucchini so I'm going to try it using each one seasonally. Too bad they "arrive" at such separate times of the year. I think the casserole would be good with asparagus and zucchini combined in the recipe.

Hello Donna, thanks again for your visit. In answer to your question re my sentiment, I do most of mine on the computer then print them onto the tag or what ever I am using. I was shown a way to do this ages ago and it works well, cheers, love annie
